I like new year’s resolutions. While I certainly don’t always follow my resolutions, I like to set goals for myself and work to accomplish them. I tend to use any new start as an excuse to make “new year’s resolutions.” I made a few new school year’s resolutions for this academic year, which started on Tuesday. On the list: create a new meal for dinner every Friday.
Well, my first Friday dinner has come and gone, and I definitely did not create a new recipe. I’m using my extremely limited food supply as an excuse. I’m going grocery shopping tomorrow, though, so maybe next week 😉
I did create a new “recipe” on Wednesday, though. I feel like calling it a recipe is a bit of an exaggeration, but let’s just go with it, shall we? I actually had no intention of posting this on my blog, so I don’t have my normal step-by-step photos. It’s all very accidental (see what I did there? Haha). I was impressed enough by the end result, though, that I snapped a picture of it before inhaling my plate.
Barbecue Chicken Pasta
– 1 boneless, skinless chicken breast
– 1 cupish whole wheat pasta (I used rotini)
– 2 Tbsp.ish barbecue sauce
1. Cook chicken in desired method (I baked it, though I would’ve grilled it if I had a grill).
2. Cook pasta according to directions on box.
3. Drain pasta, return to pot.
4. Dice chicken.
5. Add chicken and barbecue sauce to pasta. Stir to coat.
So simple but so good! All of my measurements are approximate, because I have a tendency to dump things in until it looks good enough to me. I probably would’ve sprinkled mozzarella cheese on top as well, but I don’t have any. I seriously need to get to the grocery store.
